"Shielded" hollowing tools are very specialised. I expect cutters are likely to only be available from the original manufacturers.
Lots of manufacturers are now using generic carbide cutters though, avalable from a variety of sources. Here in the UK we have Simon Hope.

It's not too difficult to make your own tools once you've got the cutters.
 
Whilst the Exocet may work well (I've never tried it) I've always been put off by the complex cutting part. If it ever needs replacing it's liely to be expensive because it doesn't look straightforward to manufacture.
I have the Munro hollower and the cutters are fairly basic HSS or carbide cups underneath a bevelled shield - I really like it on wet wood. For a non-shielded hollower I use a home made one fitted with a Hope carbide tip - it's better for dry timber. I also use other home made ones with home made hss flat scrapers made from old planer blades.
 
I have one and quite enjoy using it but I must say I prefer my Rolly Tool but more from a 'feeling' perspective than any great difference in performance!

Do you have one or are just looking at mo (I could be pursuaded to sell mine as I say, I don't really need both!).

Re spares, I'm not sure. The cutter is double ended and just needs a wipe with a diamond card every now and then so can see me needing another one this lifetime!

Let me know if you have any Qs re mine or this / other holllowing tools as I have got or used the Exocet and Rolly as I say but also the woodcut, kelton, STEWART (Sorby) system, oland type, hunter tools plus couple of others!
