Does anyone have suggestions what sort or wood and finish might be suitable for making a trolley and set of building blocks for a 1 year old?

I envisage carving letters and numbers on each face of the blocks and my main concerns would be to do with toxicity, durabilty, and how well they'd carve on a small cnc.

Our Galt building blocks are over 40yrs old made from untreated Beech and have survived 3 generations of children and still in good condition.
My father made a trolley from pine with a plywood base, painted in PU varnish - again over 40yrs ago.
Likewise I made these at that time, still going strong.
