I checked the Hayward instructions. They're a little more detailed (around 4 pages), but I don't think they're much more helpful.

Bottom line - you have to hand carve the entire moulding. You either know how to carve (and therefore don't need to be told) or you don't, in which case a few pages about pie crust tables aren't the place to put the instruction!!

So I think Hooper and Wells had it right.
