There must have been bumper crops of carrots this last season (wet soil, and tubers just went down)

Anyway Sainsburys are selling them in packed bags of 1 1/2 kgs at 69p which is dirt cheap around 18p per lb.

So cut them up into large chip size portions and stir fried them in 1/2" sunflower oil for 10 minutes, (not deep fried) gorgeous.

Sweetest thing I have tasted. (Natural) Makes a change from potato chips.

We do the same but use olive oil then add ground ginger at the end.

We roast carrots and parsnips in olive oil with salt and pepper in the oven with similar results. Most popular veg with our kids.
