I recently bought some waney edge oak to make my worktops. The way the tree is sawn the boards near the start have more sap wood on one side than the other, Is it ok to leave some sap wood that is only visible from the bottom when glueing boards together?
Also what is the maximum width of stave I should have?
 
Its fine to have a bit of sap on the underside, to avoid all sap you waste a lot of a board.

Stave width doesnt matter too much if the timber is stable. Actually Ive often made worktops with random width boards to suit the best of the timber. I would say any size up to 200mm or so. Really wide boards like 300mm plus might be a bit risky.
 
Thanks robin, I was going to add a few biscuits to help with alignment. I would like to use cascamite do think it might react with the oak, leave a black line. I'm not a big fan of that PU stuff
