If I make something from a plan I've seen in a book or on the net etc. and pass this on to a charity to either auction or raffle, will I be breaking any copyright?

How about if you sell a piece derived from someone else's plan?

If you've legitimately purchased the plan or it was free, then unless any specific license state otherwise, you're free to make and sell the pieces.

Selling pieces from 'stolen' plans is the big no-no

It's quite common for plans' T&C's to forbid commercial manufacture.

On a related matter:

The blurb in the front of a book [IIRC] states you can't make electronic copies etc.
So if your shop built robot reads a book how does she know which page she's on if she's not allowed to remember it?

Similarly does remembering things mean you're breaching copyright by virtue of the fact that you have made a recording of the intellectual property concerned?
