wood similar when matured to freshly finished european oak

hello like the title says im wondering what wood if any is similar when matured to freshly finished european oak. i think the colour of european oak is lovely when its just planed and waxed but i am not overly keen on it a year down the line when it goes the yellow/brown colour.
