I have been asked to produce some cupboard doors and face frames in cherry for a narrowboat refit. The construction will be raised panels in counter profile frames. The customer likes a three coat finish of Liberon Finishing oil. Being a narrowboat, I don't have to contend with salt water, but there can be a risk of condensation. Has anyone done this before please?
 
I wouldn't expect condensation to be a problem unless you've got glass in the doors. Condensation normally forms when there's a surface which is much colder than the surrounding air (like the cast-iron top on your table saw after a chilly night).

Wood is a good insulator, and tends to very quickly reach the same temperature as the surrounding air, so the water doesn't condense on it.
