I won't have time in the next few months, but I hope to settle down to it at same stage. I have a small kiln, so I will be able to do small castings and dichroic glass. I also have a smiths bench and a good set of silversmithing tools, and a lathe, so I hope to make some nice blades and handles.
 
You can buy Damascus steel bar - ready for cutting shaping etc.

Also lots of Damascus blades available for handling? ( is that the correct term - for you to fit handles).

Guys, the poor OP wanted advice on water stones, not rabbiting on about kitchen utensils. :)
