Strong (and/or adjustable) re-fastenable fasteners?

Hi! I'm looking for something like a strong bolt that comes with a socket. The socket should screw into wood and hold permanently, so I can dismantle the whatever or adjust it. Any idea what these are called and where to buy them??? I'd like to use them for making adjustable router guides and perhaps for sawhorses that could dismantle for storage.

Inserts are used when they have to be fitted from the same side as the bolt. If you have access to the other side, then another option is the tee nut. Such as
