I think your points are well made. The revised construction now uses SS coach bolts, is sound and looks good. I don't think that the problem arose so much from racking - the benches aren't affected - its the table legs (and this wasn't moved) but more to do with a low spec fixing that I applied too much torque to.

Not all stainless steels are "stainless" if that makes sense.

Some stainless steels contain a small amount of ferrous ( Steel ) to give added strength. A magnet should not be attracted to SS but with some grades there is some grip from the magnet, these will eventually weep and mark the wood. As scrit says the german Spax screws are good quality.
