Certainly you can use hide glue but do experiment first! However for a simple process that is easy for a beginner, I recommend that you use PVA glue brushed onto the veneer at 50- 70% strength (dilute with water) and also brushed onto the substrate. Apply a couple of coats to each surface - allowing them to dry between coats. Allow both veneer and substrate to dry for several hours. You will then be able to apply the coated veneer to the substrate with a domestic iron set to a high temperature.
