isnt the best way to cut thick foam to squish it thinner with two pieces of wood spaced slightly apart and cut through the gap
 
I did try that last year, and cutting with just a sharp knife it was "OK" - but a bit ragged at the edge, even with the wooden strips. But as said in my OP, cutting with the electric carving knife was a MUCH better solution for me (VERY straight edges and no wooden strips required, just a fibre tip pen line). Angled cuts too.
