I am making some drawers and would like to use maple.

I am used to hearing about soft and hard maple, however I seem to be able to get European, Canadian, or steamed...

Any ideas on the differences?
 
The Canadian one is €1,700 m^3 and the european is €950, so there ought to be a heck of a difference between them.
 
Hard Maple (sometimes called Rock Maple) Acer saccharum is the stuff we import from the US. It tends to lean towards more of a slight tan colour. The common European Maple (Acer pseudoplatanus) is lighter in weight, a little softer and Whiter in colour. Both woods are suitable for your use.
