Building a cherry cabinet for the downstairs cloakroom, it will be floor standing about 2 feet from the small washhand basin.

Anyone got advice on what I should use for the finish?

I think I'd go for a Finishing Oil or similar, for the ease of application and the water resistance for the odd splash that might find its way onto the cabinet.

Melamine Lacquer (or similar) would be another option but this is a bit harder to apply over a large area - not to say that it can't be done and has the advantage of drying quicker if you're in a hurry!

I'd second Terry's recommendation for finishing oil-I've a coffee table finished with it. It has stood up excellently against tea, coffee, milk, squash, etc. So should be perfect for you cabinet.
Oil also looks wonderful on cherry
Philly :D
