Fitting kitchen, base units have some panels mid run which need cutting off so plinth runs under. Do I put cut end under worktop so nice finished end is at bottom or does it not matter? They are either side of belfast sink so was worried about water getting in cut end although sink should be well sealed under granite worktop?

In those circumstances, I would cut them at the top and re edge them before fitting them in position. If you havent got any matching edging, it wont matter if you just use white or whatever you have to hand as it wont be seen once the installation is complete and the Belfast Sink is sealed to the underside of the Worktop.

I dont like leaving any bare edges in a kitchen installation as it will, in time, absorb moisture...
 
Ahhh, too late! #-o

I put the good end to bottom and cut edge to top with some pva on to seal it, that is what a kitchen fitter I know recommended but I like your method better. Hopefully it should never see any moisture.
