My project for later this year is making and refitting our kitchen, This question has probably been asked before (I can't find it though), but what finish would be recommended for kitchen unit doors. The wood to be used will be either american cherry or oak.
 
When I did my kitchen (maple) I finished the doors off with clear matt varnish. I applied 3 coats with a light rub down between coats. Looks good
 
I'll add to Waka's recommendation- use water based varnish, less smelly, dries faster and is harder too. Use the clear stuff. You might want to experiment with a coat of Danish oil first.
I'd recommend American white oak over the cherry as darker woods can make a whole kitchen quite dark
