I'm thinking of making a eu oak dining table.

The top would be made up of 32mm x 171mm boards.

I would like to put a 44mm x 32mm edge all round and have mitred corners

Would appreciate some imput as to possible pitfalls with the edging.

Plenty of pitfalls there. Lots of us find accurate mitres difficult any way, but if you just wanted to glue long grain pieces round the top like a picture frame, you'd be asking for trouble when the main boards shrink and swell more across their width than they would in the length. That's why you don't see solid wood tops with edging all round.

If I were you I would leave the edging off entirely. That way

- you can see the decent wood that you have used
- the edging does not detach with movement
- and the whole thing doesn't look as if it's made from manufactured boards.
 
Or just make it from thicker timber, as andy says the long grain edges won't be too much of a problem but the endgrain will be wanting to move against the edging strips

The other comments are correct about movement.
You may aswell make it from veneered MDF.

If you do use solid timber you would be better using a construction technique that shows off the beauty of the solid wood.
