email troubles

My wife has a cheapo laptop computer and if she makes a system restore point and then uses this point at a later time all of her email entries have gone. This includes resetting the Outlook Express accounts up again.

Does anyone know how to stop this or even how to save emails to a CD so if this must continue at least some mails are saved that are needed.
