Because it sticks wood together?
I'm not sure it's used much in fine furniture, but would be useful if you needed something that has some flex in it.
 
Besides the flexibility that Mike mentions, most of these adhesives also have gap filling capabilities which can be useful (!).

There are different formulations of construction adhesive of course - each with different properties.
 
Yes, it's handy where one part is flat and the other isn't, like fixing a framework to an uneven wall.
But it's far too thick for assembling joints. It would be harder to make joints with enough room for it than to make well-fitting joints and use ordinary glue.
