Bacon and eggs DW style

Name it what you like.

Ingredients for two.

6 rashers of bacon
6 small eggs.
6 tablespoons of milk
2 sticks of spring onion chopped
2 tomatoes cut in to segments
8 mushrooms cut to small sections.
I Oxo Italian oxo for flavour.
grated cheese optional.

Put rashers of bacon under grill until nearly done.

break 6 eggs into bowl with the milk and seasoning.


Put the chopped spring onion into frying pan with butter and oil to fry for 4 mins.

add mushrooms, tomatoes and fry for another 3 minutes.
add oxo (italian ) crumpled and dry to frying pan.
add bacon from grill (chopped)
fry for a minute,

Pour over eggs and heat in frying pan for around 4 minutes adding cheese before egg sets.

Then put under grill (still in frying pan) until top has set.

Turn over on to a flat non stick tray and serve on to plates.

Asparagus spears served separately or new potatoes<Jerseys or a salad if wanting extras.

Looks like a pizza that's been a bit too close to a GM experiment :)

But bet it tastes fantastic!

Here's what I made for dinner last night (no piccies, Im afraid) :

Mashed spuds :
4-5 differen varieties from allotment last year
lots of butter, salted
coupla teaspoons english mustard (not enough to taste as mustard, but enough to 'lift' the mash flavour)
enough milk to soften resulting mash

Soss n onion gravy :
6 tesco (sorry) herb sossidges fried in little olive oil till golden and a little bit stickily blackened (you'll know what I mean) on skins.
Take out of pan
Add sliced onions to pan with any juice that comes out of sausages (again, a few onion varieties, red/white/mixed) from allotment last year)
*Slowly* cook for 1-1 1/2 hour till golden and softened
Add roughly i pint beef stock and a plenty o black pepper
Stir and heat through thoroughly till well mixed
Add soss (cut up if you like) and heat through
Thicken with cornflour if that's your thing

Add to plate with mash

Enjoy with some yummy beer.

AKA a Spanish Omelette, and coincidentally, exactly what I made last night with the addition of some suate pototoes.

Has anyone ever had a go at making their own bacon? I was at the River Cottage a couple of years ago, and spent a day on the meat curing course, with Ray the butcher and about 16 other carnivores :)
It was surprisingly easy, and the bacon was pretty much the tastiest slice of cooked pig I have ever eaten :)

I can post up the 'recipe' if anyone is interested?

BTW, I have just watched last nights addition of BBC "Hustle"

To be pedantic about it, A Spanish Omelette is defined by the potatoes. John's creation is just an Omelette.

How about something quicker, put two rashers of bacon on a plate, microwave for 1 minute, crack an egg on top cover with another plate and microwave for 3-4 minutes, slide off and place between two slices of bread, and you have a bacon and egg sandwich in 5 minutes.

It's also a tasty way of using up left over chicken and potatoes.
Give the potatoes a frying start (to brown), continue frying with some chopped bacon until golden, add the cooked chicken and then some beaten eggs.
Season to taste.
Cook as an omelette.

BTW, if you put water in a frying pan plus a portion of oil as if frying, then add sliced potatoes, turn on the heat the water evaporates and then turns to a frying condition.

(DO NOT ADD WATER ONCE YOU HAVE PUT THE HEAT ON)

The same can be done with roast potatoes in the oven I am told.
