Advice needed for table project

I am looking to cut some small mortises into a large tree trunk i am making a table out of.

I am trying to level 2 small areas in order to fit squared/flat brackets to support the upper of the table. How would you recommend i do this?

Any advice would be greatly appreciated. Any demo videos would also be super helpful
