I've come by some spare "Mushroom" type emergency stop buttons, and was thinking of fitting them to my Planer-Thicknesser and new Grinder.

Both have NVR protection in their switchgear, so in theory I can put the E-Stop between the mains and the Switchgear and all will work well.

But, the stop buttons only have two connection points, one for Live and one for Neutral, when I expected 3; should I connect the Live and Neutral to the switches, and run the earth cable through unbroken, or will this cause an issue?

You don't want to switch the earth connection and it the boxes are plastic they don't need an earth connection.

I figured I didn't want to switch the earth, however I'd be dubious of removing the earthing as it's being put between the wall and the main switch, so removing earth removes the earthing of the motor (which has aa cast Alu casing).

Should I be wiring it in after the main switchgear, so that the circuit to the NVR relay is broken, without cutting power to the whole machine.

Does the stop have 2 or 4 terminals?

If 2, you're only doing the live. If 4 then live & neutral.
Just use a crimp or connector block to make the earth continuous.

Ideally, all before the motor and nvr if it is to be a main stop.

Or strip the cable leaving the earth/neutral uncut.
