They are all good ideas gents. Think I’m gonna go for is cut 30mm off the top and glue 10mm dowels in to the bench part and attach 30x18 with corresponding holes. I will make a drilling jig to make replacements in the future.
 
Hide glue edge jointing the sacrificial pieces maybe? You'd have to apply steam to break the glue joint down the line when replacing them, but unless you're doing that regularly, the extra bit of hassle might be acceptable as a price for ease of construction and lack of faffing about?
 
How about a 100mm X 18mm trench in the top and have a length of par to slot in it. You could hold it in place with cleats either side of one if the cross members.

Not sure if that's clear?

You could have one on the RHS for larger boards.
