I am guessing they have been dried or hardened in some way. Every avocado stone I have remove has been quite soft.

Totally agree with Whisky Will. Can’t stand the things, but SWMBO loves them. I’m going to save some to one side in my workshop and have a go at working one. Thank you for posting.
