If I would like to stain Iroko to a darker shade, but want it food safe, what is the best to use?

I would question the use of Iroko for anything that would be in an intimate enough contact with foodstuff to warrant consideration as food safe.
A lot of individuals are allergic to the Iroko.

I've used spirit stains to disguise sapwood in darker woods like Walnut and Zebrano that have been finished with sanding sealer and wax for Fruit Bowls with no problems and used spirit stains to tint sanding sealer and finishing oils.
 
Hi

I was hoping the Iroko would be OK for food use, I hacked it out of a big lump of kitchen work surface. Is Iroko very toxic?

The dust (& volatiles ?) when working or handling bare wood, for some folks Yes.
