These days the guys at the sheet goods store cut up and edge band everything for me, but if it wasn't
so I'd consider making something like this:

edge banding is so simple though that unless you are doing large quantities, all you need is an iron, iron-on edging and a slightly blunted stanley blade scraper to trim off the excess.

True. For a few meters the old iron comes in handy.
I used to use a slightly blunted 12" planer blade for trimming.
For a bigger job it's slow. Boring too.

The problem with pre glued material is getting it to melt evenly, ambient temp, speed temp of boards all effect it, glue pot set up is way better.

Sure, the glue pot set up is way better.
The hand held ones cost more than 2000 €. For that money they better be.
