anyone know a source of un-handle steak knives in uk?
fancy a go at putting my own scales on
or is it easy to remove and replace your own?

Never really understood steak knives - they don't cut well (they tend to tear the meat) and are designed for meat which is poorly butchered, matured or cooked.

Same with fish knives and forks - originally designed for the upper classes to demonstrate their wealth, refinement and superiority over the masses. But like steak knives they offer no functional benefit over the standard item - I find them functionally inferior with blunt blades.
 
Yes, the faux bone handles can be removed. If you try and split them, WEAR EYE PROTECTION. The stuff explodes like a grenade, and sends sharp splinters flying. I mean the sort where the handle is solid, and the knife fixes in to it by way of a tang.

I've never tried, but heating them may be a safer way to do it.

p.s. apologies for wobbling slightly off-topic, but why are those old fashioned fish knives that shape? Just fashion? Or for a purpose? I see them all the time at car boots.
